Creamy Chicken Stuffed Shells

Before our youngest came along, we used to eat this meal just about every month.. sometimes twice a month! It is a simple meal that can be made on a budget! So for us, starting out as a new family… it was great!

Now that we are mostly a Dairy Free home, this meal seemed to slip out of our minds… Bummer! But recently, I decided to make it again and just supplement the little ones dish with something else!

It was like heaven!! We had forgotten how much we loooove this recipe! Especially the husband. This is his favorite meal, and now that it’s back in the lineup… I think he is a happy camper.

Creamy Chicken Stuffed Shells

INGREDIENTS:

4 cups of chopped cooked chicken

1 box of boxed stuffing (plus ingredients needed to prepare)

1 can of Cream of chicken

2 cups milk

1/2 cup mayonnaise

large shells pasta cooked

INSTRUCTIONS:

1.Preheat oven to 350. COMBINE chopped chicken, cooked stuffing, and MAYONNAISE in a large mixing bowl. Once mixed well, stuff MIXTURE into cooked shells. Place into a uncovered baking dish.

2. in mixing bowl, mix together cream of chicken and milk. Whisk together until blended. Pour over top the shells.

3. Place uncovered in oven. cook for APPROXIMATELY 30 minutes, or until heated thru and browned on top.

This meal is also great reheated! So I often times make extras because the chances of leftovers are slim with this meal… everyone gulps it up! There are also great ways to save time on this meal too! I actually cook the stuffing in the microwave… and I usually use chicken that is leftover from a previous Whole Chicken Meal! Easy peasy and SAVES you some time and money!! Who doesn’t want that?

Sometimes I serve this meal with green beans on the side. (It may even be yummy with green beans added into the shells!? I’ll have to try that sometime!) But often times we just eat these as the meal with no sides! Yes… It is THAT good!
