This week I created an amazing thrown together Simple 30  Minute Chicken Tortilla Soup! I can’t deny that it was something is seriously pieced together like a bat outta hell. But it was done in time for supper!!! Fhew! The best part??? It was DELICIOUS! Check it out!

I’m sure you have started to notice the trend. Not all days go as planned, and that even though I plan my meals out monthly, sometimes there are days where I forgot to thaw out meat, or I just simply don’t feel like eating what was on that day. Then.. the panic starts in.

Chicken is usually my go-to because it is simple enough to thaw out quickly. This particular day was a chilly fall day, so I imagined myself indulging in a good cup of soup! And hence…a recipe was born!

It’s time to start thinking about Thanksgiving dishes! Thanksgiving is probably one of my favorite holidays to host. The comfort food mixed with the less hectic day (than Christmas), I just love it!

Most definitely this can be a hectic day with all the cooking, baking, and juggling of: children, husbands and in-laws. Sometimes, by the time I’m done placing the grub on the table.. all I’m hungry for is a glass of wine and a quiet room.

So this year, I wanted to surround myself with simple options to our traditional dishes.

Red Wine French Beef Stew

This meal is great for fall… it is a little comfort mixed with fancy pants! When my brother was home on leave I made a hug batch of this. I was nervous that the kiddos wouldn’t care for it since its main marinate is red wine, but I was wrong! They gobbled it up!

Hey everyone! First off… I’m sorry that this post is so late! We recently spent 2 1/2 weeks of time with my brother visiting home on leave… and now that he left, I’m trying to put the house back together! ANNNNND add potty training to the mix! YAAAAY! *fhew!* Are you out of breathe? I am!

So let’s get this party started by taking a look at one of my quick fix dinner! Great for a day like ours has been this past week! ha!
